Better Homes and Gardens|Mojo Chicken!
It’s Food Friday and we are cooking yet another recipe from Tasty Chicken Dinners from Better Homes and Gardens!
Mojo Chicken is a sweet, spicy, and tropical meal. The balance of flavors are so amazing that you won’t want to share. This recipe calls for wings but I used whole chicken pieces. Let me share with you how I make it.
Mojo Chicken Recipe
1 Cup of Mango Nectar
1/2 Cup of Lemon Juice (Fresh)
1/2 Cup of Orange Juice (Fresh)
1/2 Cup of Chopped Parsley
1/4 Cup of Red Wine Vinegar
1/4 Cup Olive Oil
6 Cloves of Minced Garlic
1 or 2 Jalapeno Peppers Seeded and Finely Chopped
1 tsp of Salt
1/2 tsp of Cumin
12 Chicken Wing Halved
1 Mango Peeled, Pitted, and Chopped
1/3 Cup of Chopped Onion
1/4 Cup of Chopped Cilantro
Marinade:
In a large bowl add mango nectar, lemon juice, orange juice, parsley, vinegar, garlic, jalapeno peppers, salt, and cumin. Mix well with a whisk. Before adding the chicken reserve a 1/2 cup of the mixture for your mango sauce.
Add the chicken to a ziplock bag and then pour over the remaining marinade. Marinade the chicken for 2 hours or up to overnight. I marinated for 8 hours and it was delicious.
Cooking:
Pre-heat the oven to 450 degrees. Remove chicken wings from the marinade and place on a baking sheet in a single layer. Discard the marinade. Place in the oven for 25 minutes or until the internal temp of 165F.
The Sauce:
In a blender combine the fresh mango, onion, cilantro, and reserved marinade. Then blend until smooth, Serve the sauce with the chicken wings for dipping.
My Thoughts of the dish:
I thought this was an excellent starter for any party or dinner. I did add a little lemon zest and orange zest to my marinade which intensified the citrus flavor.
I also added a few drops of jalapeno Tobasco sauce to my mango sauce. It gave it a little more heat. If you don’t like it spicy leave it out. All and All I thought this was good recipe and I would try it again.
