Herb Chicken Breast! (Recipe and Video)

What you will need:
- Chicken
- Salt
- Pepper
- Olive Oil 2tbsp
- Butter (Knob of butter)
- Garlic Clove (Slit)
- Parsley (2 sprigs)
- Rosemary (1 sprig)
- Thyme (3 sprigs)
*Tips- Using chicken breast with the bone will have more flavor and will stay moist during the cooking process.
Pre-heat Oven to 350 Degrees
Preparing the chicken breast:
Take a sharp knife and cut the chicken on a diagonal. Make the slits in the breast halfway down. Try not to cut too far down into the chicken because you still want it to keep its integrity during the cooking process.
Brush a light coating of olive oil on top of the chicken breast skin. This will help the seasoning adhere.Then season with salt and pepper on the skin side.
Prepare the skillet:
Place the butter, herbs, slit garlic and olive oil in the skillet. On medium heat allow the butter/oil to melt into the herbs and garlic. Once you see the butter is frothy place the chicken in skin side down. Season the other side with salt and pepper.
Cooking:
While the chicken is cooking on medium heat leave it alone. In about 3-4 minutes the chicken will release from the pan. At this point you will see the perfect sear on the skin. With a spoon bast the chicken with the herb oil.
Then sprinkle some fresh parsley on top. Place the chicken breast in a heat proof skillet into the oven at 350 degrees for 10 minutes or until internal temp of 160.
Resting:
Remove chicken breast from the oven and continue to bast the meat. Then with a piece foil tent over meat and let rest for five minutes. Always rest your meat for at least half the time you cooked it. You want to allow the juices to redistribute back into the meat.
Plate it up:
Drizzle some of the herb oil and sprinkle more parsley on top of the breast then serve. This chicken is perfect with any salad, rice, or on its own.
