Homemade Chicken Sausage!
I am telling you this recipe is so good for sausage you may never buy them from the store again! While living in the Middle East I have found the sausage among other foods not to be so great. I have been dying for good breakfast sausage so I did a little research and came up with this recipe. I posted a photo of the chicken sausage patties on my Instagram and several people asked me for the recipe. For those who didn’t get to ask this blog is for you. This is what you will need:
This recipe will make 8 sausage patties
2 Chicken Breast (cube it up)
2 Tsp of Sage
1/8 of Teaspoon Crushed Red Pepper
1 1/2 Tsp of Fennel Seed
1 Tsp Onion Powder
1 Tsp Garlic Powder
1 Tsp of Thyme
1/3 cup fresh parsley
Pinch of Sugar
2/4 Cups of Plain Bread crumbs
1 Egg
Add everything to the food processor and pulse until combined. Once combine wet your hands and shape the sausage patties. For even sizes use an ice cream scoop. This will help them cook evenly during the cooking process. Then lightly salt and pepper the tops and place in the fridge for at least two hours.
After two hours preheat a large skillet with 2 Tbsp of canola oil. On medium heat place the sausage in the pan season side down. Then season the other side with salt and pepper as they cook. Once you see the chicken turn white a third of the way up flip. This should take about 4 to 5 mins.
After you flip shoot the heat down to medium low and cover for another 5-7 minutes. This will make sure they will cook all the way through.
After cooking wrap in foil and let them rest for five minutes. Then enjoy. These patties are good for breakfast sandwiches or on their own. You can always make them and then freeze them until you want them again.
